What to expect

Seville's oldest market: still feeding the neighborhood

Your morning starts at the Mercado de la Encarnación. There's been a market on this spot since Roman times, and 40 stalls still operate here, many owned by the same families who were selling before the old building came down in 1973. Your guide walks you through seasonal produce, cured meats, and seafood, and introduces the Spanish eating schedule.

Acorn-fed jamón ibérico: carved to order

Your first tasting is Spain's most celebrated ingredient. At a family-run stall in the market, Gema, who has been in the ham trade since she was 19, sources all of her pork from her home region of Huelva. You'll watch a master slicer cut paper-thin pieces of acorn-fed ibérico de bellota, ham from pigs that spend their final four months eating acorns in the oak pastures of southern Spain.
