Your tour starts in the kind of bar where mussel shells land on the ground and nobody minds. Your guide orders mussels or chistorra, a traditional Basque pork sausage, and pours cider from above the head in a long, thin stream to aerate it as it falls. It is loud, it is crowded, and your guide is already pouring the next round.
From there you'll step into a small, quiet shop where a whole Ibérico ham leg sits on the counter.
