The boulangerie: croissants, still warm
You'll start at a neighborhood boulangerie tucked into a historic Montmartre building, where the croissants come out of the oven just before the tour starts. Your guide will walk you through how French breakfast actually works (the timing, the dunking, the butter) while you eat. Some mornings, the route shifts to a nearby pâtissier for a chou pastry, one of the cornerstones of modern French pastry.
The 1921 bistro: oeuf mayonnaise and white wine
You'll step into a Montmartre bistro that's been serving artists and locals since 1921, with the same wooden bar and tile floor. Your guide will pour you a glass of chilled white and the kitchen will send out oeuf mayonnaise: boiled egg, mayonnaise, a leaf of parsley. The dish sounds like nothing and turns out to be the test of every French bistro that serves it. This kitchen's version has won awards, and once you taste it you'll start ordering it everywhere.
