Your evening begins at one of Madrid's oldest taverns, where vermouth has been poured from the same taps for more than a hundred years. You'll pair it with salt cod fritters and slices of Manchego, two of the house specialties that have been on the menu almost as long as the vermouth itself. Your guide sets the scene for the night ahead and explains why, in Madrid, ordering a drink always means food is on its way.
Cider poured from above your head, and the real Spanish tortilla
Your second stop was once a horse stable. Now it's a narrow, warm room where the house drink is dry cider from Asturias, poured from above the head to aerate it on the way down. You'll try the pour yourself and sit down to a thick wedge of Spanish tortilla. Your guide will also settle one of the most common tapas myths, explaining what the word "tapa" actually means in a Madrid bar.
